Naan Pizza
A great way to use leftovers. This recipe works well with naan, pita or flatbread. For the toppings the sky is the limit - anything that you have leftover can go as a topping0 And you do not even need pizza sauce.

Instructions
  1. Chop the cheese into thin slices and set aside.
  2. Spread a good layer of the leftover vegetables, meats, beans on the naan, pita or flatbread. There is no need for pizza sauce. You already have the seasonings and sauces in the veggies, meats or beans.
  3. Place the sliced cheese on top of the veggies, meats or beans.
  4. Heat a heavy bottom pan and add some oil. Place the pizza on it and lower the heat. Cover and cook for about 5-10 minutes or until you see the cheese melted and the base is getting a golden brown color on the side. The base should become crispy.
  5. Serve with your favorite fruit on the side. I have chopped mango here. My favorite fruit.
